The issue I see with seasteading, anything anchored will automatically fall under jurisdiction of nearest country. Any platforms must be free floating. The issues then are control and stability. Then you have defense issues. There likely wouldn't be much cry from media or citizens if a government came out and "took over" your rig. Now days all they have to do is say you are a terrorist and bam, immunity.
Barring all that the simplest of seasteading that I've considered is just buying a lot of barges and retrofit with internal combustion based propulsion and electric propulsion with solar panels and wind turbines. Rig it up to a computer and GPS to control it's position once placed. Electric based would be main source, IC as backup. Of course with anything, after awhile you have to worry with rust/disintegration of the platforms.

I like things quick and efficient. This is same for my cooking habits. If it takes me a half hour to cook something and 15 minutes to clean it up, it better be damn well tasty and worth the effort. Below are a few of my "recipes".
There's the nuked egg.. crack an egg into a stoneware bowl. Nuke till set like you want. Enjoy. Simplest egg you can make that is pure egg.
There's also the nuked "steamed" veggies. Throw some frozen veggies in a stoneware bowl. Nuke till done like you want.
A not too healthy recipe.. rice cooker ramen. Throw some ramen in a rice cooker bowl with some hot water. Turn on and stir occasionally until it's done. Drain enjoy.
Another ramen recipe, nuked ramen. Throw some ramen in a bowl and add just enough water so the brick floats a little. Nuke for roughly 2-4 minutes (until it is done like you want). Drain enjoy.
Of course can't get any simpler than raw unprocessed foods. Like an apple pear or banana. With an apple you can wash and eat. Banana peel and eat. You can eat tomatoes raw as well. Wash and eat.
Simple hot tea. Take hot tap water (assuming your hot water heater puts out near boiling water) and put in a cup. Throw in tea bag. Steep for a few minutes. Enjoy straight or with a touch of sweetener of your choice.

I say any "ghost town" that is known by more than 100 people isn't a good SHTF bug out location. If shit flies and people move in, there will be too many people wanting a free ride. In a survival situation free rides cannot be given except under very special circumstances.
On the east coast of the USA I know there's a lot of ghost towns that are such because all the jobs left so the people left. Many are not even on the maps. When I get the resources I plan to hunt down a ghost town that isn't on a map and "secure it".
